Day 7 without Wife

And suddenly it’s Day 7 without Wifey.

As you may have read in a previous blog, my biggest worry was food.  But so far, we’ve conquered the following:

* Ordered Pizza – YES
* Oven Fry Food – YES
* Eating out – YES
* Dinner at parents – YES
* Reheating leftovers – YES
* Soup and bread – YES
* Coffees at cafes like Greens & Co – YES

Which leaves us cooking at home!!  I’ve tried to make an activity of it for the kids, so we spent yesterday scouring the MasterChef website and our dusty cookbooks looking for recipes, then an hour at the shops yesterday looking for ingredients.  Let’s just say that today will be interesting and fun (and hopefully not too messy!)

  1. Can’t beat salad and BBQ for easy dinners… Or even a roast chook and salad.
    Chook – 1.5 hours in an oven at 220*, turn it over twice (at the 30 and 60 minute marks). Poke the thigh with a fork, if the juices run clear, it’s cooked. If not, give it a bit longer. If your oven is very hot, poke it at the 1 hour mark and watch out to be sure it doesn’t burn/dry out. For fancy chook, make a sauce of olive oil, 3 cloves crushed garlic and thyme (or basil or oregano or even parsley), juice and zest of one lemon. Mix it all in a bowl, then rub it all over the chook, including in between the skin and flesh (gross!) and pour everything over the chook. Baste it when you turn it (ie rub the juices over the chook).
    Salad – lettuce/greens, tomato in wedges, cucumber in slices, red capsicum in slices, mushroom in slices. Dressing: 1 part vinegar to 2 part olive oil (eg twice as much oil as vinegar – whether that’s 2 tbs:4tbsp or more), 1/4 tsp mustard (any type), 1/2 tsp honey. Mix. Pour over a dry salad (taste as you go to see how much you want).

    Baked potatoes are easy (prick decent sized potatoes with a fork then in the oven just on the wire shelves for an hour), or go with a nice loaf of fresh bread from the bakery.
